Sebastian Fürst runs the family winery in the vineyards on Bürgstädter Berg. Together with his wife Isabel, he took over the winery from his father Paul Fürst in 2018. Paul Fürst was one of the few renowned winemakers who, through an exchange of experience with large Pinot Noir wineries in Burgundy, was able to optimally bring out the subtleties of Pinot Noir at an early stage. Due to this pioneering work, he was named Winemaker of the Year by Gault Milleau in 2003 and received the Lifetime Achievement Award in 2020.

Sebastian Fürst focuses even more consistently on the ecological orientation of the winery. The vinification style of the wines is very much based on Burgundy. Sebastian Fürst received the award for Winemaker of the Year in 2018 from Falstaff and in 2022 from Vinum.

Reduced yields combined with consistent foliage work and repeated selective hand-harvesting ensures that only the best grapes are processed. In the style of traditional Burgundian vinification, fermentation takes place in open wooden vats with a proportion of whole grapes, sometimes up to 100% rape. The wines mature for up to 20 months in Burgundian piece barrels, clarify on their own and are bottled unfiltered.
